Have a look on some kareoke sites, they have software which separetes vocal from backing. I tried some a couple of years back, it took some setting up on individual tracks. Can`t remember the title of the software

as per Clayts, i seem to remember that the original (ADAT?) tapes need
to be available for someone to remove layers / tracks.
