Lamb Mince...and what to do with it
Wonder if anyone has some good ideas for what to do with a pile of lamb mince, probably half an onion..may be some garlic....and anything else cheap and cheerful I can get my hands on at short notice.
I`m thinking of adding some broad beans..but this could be dangerous.
Any ideas? To be honest, I`ve never been much good at cooking mince..it`s either in too long, or Is hardly cooked at all so any help will be appreciated. Will be cooked this evening :-).

oo `ell.....yes, er....actually one of my favourites :-).....but I`m a complete novice at anything too clever, perfering to throw everything in the pot and seeing what comes up. Mind you....may well be the time to see what I can do.

cook the mince, add the onion, a tin of tomatos, a tin of baked beans, black pepper, any green herbs you`ve got and some cayenne pepper or curry/chilli powder....mmmmmmmm, lovely....

Follow these instructions for my authentic Indian `Keema` (mince lamb curry) and you will not go wrong:
You will need.
1 Onion
Garlic 2 cloves
Ginger 1 tsp fine chopped
Green Chili x 2 - depends how hot you want it.
1 cup of chicken/beef stock
1 Tsp Ground Coriander/Cumin powder (avail in your supermarket)
1/2 tsp turmeric
Salt to taste
1/2 tin chopped tomatoes
Coriander to taste
Finely chop your onion, garlic, ginger and chilli. Fry it in butter/oil medium heat for 10 mins.
Chuck in the coriander/cumin. Turmeric and salt and fry for a further minute.
bung in your tomatoes and heat until the tomatoes separate from the oil (should take about 2 minutes.
The basic curry sauce is now ready. Chuck in your mince and stock and simmer for 25 minutes and add coriander to taste. (you can also add a handful of peas at the same time a the meat if you like.)
Serve with warm naan bread or rice and a dollop of yoghurt. ;)

Finely mince the onion and garlic and add some corriander. Shape into kebab roll and grill/bbq - luvly with a dip made of yogurt, mint and cuecumber!

Nooo. go for Pastitsio instead:
INGREDIENTS
500 gr thick macaroni
1 kg minced meat
180 gr grated kefalo or Parmesan cheese
100 gr oil
1 medium sized onion
500 gr ripe tomatoes
1 portion béchamel sauce
salt
pepper
METHOD
Partially cook the macaroni in salted water and drain well. Put in a baking dish and pour half of the butter over the macaroni. Beat the egg whites and mix in the macaroni. Keep the yolks.They will be used to make the bechamel sauce. Sprinkle with half of the cheese. With the remaining butter brown the minced meat and the onion. Add the strained tomatoes or the tomatopaste, salt, pepper and simmer until liquid is absorbed. Remove from the heat and add the remaining grated cheese. Stir all well. Prepare the béchamel sauce. Butter a baking dish. Lay half of the macaroni in the pan. Spread evenly with the meat mixture. Lay the rest of the macaroni on top. Pour the bechamel sauce over them and sprinkle with grated cheese and some melted butter. Bake in a moderate oven.

Perhaps I can go for one a night :-)
Would you recommend one of those large frying pans with high sides?? Not got one yet but should be able to find one before attempting some culinary delights this evening.
