I have had a panasonic TV and I have just checked the manual for yours and the answer is yes you can mount the TV on a wall since the pedestal is removeable.
Panasonic TV`s sometimes come out of the box with the pedestal already attached, as mine did (37" LCD model). Yours is a plasma which is why I checked the manual online.
RE: scart/coaxial to 5.1 adapter?
There are 2 ways to get 5.1 sound and I would very surprised if the first is not your option:
1st: attach the digital coaxial or optical digital output from the DVD deck to a digital coaxial or optical input on your home theatre system assuming it has one, which it should if it calls itself a home theatre system! These input/outputs must be the same type on both devices I`m afraid or you are out of luck.This pipes the 5.1 - or whatever you select from the disc options - bitstream signal which is then decoded and spilt up into the 5.1 channels which you output as separate speaker outs. Check to see if your home theatre device has logos on it such as Dolby Digital or dts which imply decoding is onboard.
2nd: if your DVD deck can decode the 5.1 channels it can send the 5.1. analogue signals separately to your home theater device for amplification (then to the speakers). If so the DVD player will then have the 5.1 phono sockets on its rear and all must be linked to similar phono inputs on the home theatre device. This seems very unlikely from what you have described.
If you only have the exact inputs and outputs you describe, stereo is your only choice. Have a good look for digital inputs on the Acoustic Solutions; sometimes they are elsewhere on the rear of the device.
P.S. I have just found the manual for your Acoustic solutions and I`m afraid it is only an amplifying unit with no decoding of its own. So you are out of luck. Sorry!

RE: Upscaling - Let the TV do it, or leave it to the DVD player
Although your eyes are your final judge, I would let the player (source) do the scaling (they are usually better and the TV has enough processing to do) and set your Sammy to map the incoming pixels as 1:1, which I think is Samsung`s description for `no scaling required`.
I have read a number of reviews where this has been preferable, although the equipment involved probably dictated this.
