The Vista Series are more-or-less Special Editions of Special Editions. For example the Vista Series of the Sixth Sense & Unbreakable contain more extras on the disc & some goodies such as postcards & orginal artwork cells etc... than the original 2 DVD Special Editions that where released of them in the past.

Think of the Vista Series as ultimate versions of a DVD title, and only Buena Vista titles. These tend to be region 1, though the same 2-disc sets are finding their way to region 2 as Collector`s Edition.

The re-releases as 2-disc Vista collections tend to be re-releases of the original single disc DVD. As was the case with The Sixth Sense and Tombstone which were one disc, then re-released as 2-disc Vista Series DVD with more stuff.

Unbreakable was released as a 2-disc set to begin with.

Pearl Harbour was released as a 2-disc set and then a Vista Series 4-disc set came out. There are so far four titles in the Vista Series:

The Sixth Sense
Unbreakable
Tombstone
Pearl Harbour

hope this helps!
